Spicy Shrimp Marinade

Kats Shrimp Marinade

6 Garlic cloves diced fine
1/3 cup Olive Oil
2 Tbs. Red Wine Vinegar
2 Tbs. Basil
1/2 tsp. Salt
1/4 Tsp Ground Red Pepper (or more to taste)
1/4 Tomato Sauce
Soak peeled and deveined Shrimp for 3 hours in marinade.
Fill skewers with Shrimp and discard remaining marinade.
Grill for about 5 minutes each side. Don't grill too long or the Shrimp will taste like a pencil eraser.
*Tip for using wooden skewers... soak in water for about an hour to keep from burning on the grill.

Margarita Dip


Kat's Margarita Dip


8 oz. pkg. cream cheese, softened
1/3 cup frozen margarita drink mix, thawed
2 Tbsp. orange juice
1/4 cup powdered sugar
1/4 cup whipping cream, whipped


In a medium bowl, beat together softened cream cheese, margarita mix, orange juice and powdered sugar until smooth. Fold whipped cream into mixture until well blended.

Cover and chill 1 hour to blend flavors.

Serve dip with strawberries, cherries, peach slices and other fresh fruit. 12 servings

Bourbon Bundt Cake


Kat's Bourbon Bundt Cake


1 Yellow Cake mix
5 eggs
8 oz. Sour Cream
1/2 c. Coconut flakes
1/3 c. bourbon
1/2 c. REAL butter (melted)
1 pkg. Vanilla Pudding
1 c. Pecans Chopped
1/2 c. Semi-sweet Chocolate Chips

Hold 1/2 Cup Pecans to the side
Mix remaining ingredients
Spray bottom of Bundt pan with non- stick spray
Add reserved pecans on the bottom of Bundt pan

Pour batter into pan
Bake @ 350 for 45- 55 min.
or till tooth pick comes out clean and med brown on top
