Boliche Alabama Style

Alabama Smoked Boliche
(Cuban pot roast)
(Cuban pot roast)
1 (3-5 lb) eye round roast
4 chorizos, quartered length wise
Remove casings from the chorizo. Hollow a hole in the beef and insert the chorizo. I slightly freeze the chorizo to make it easier to insert.
~Boliche Rub~
Garlic Powder
Onion Powder
Seven Pepper Seasonings by Sauer
Mustard Powder
Sea Salt
Place meat in a large zip-lock bag
add
1/4 cup Orange Juice
1/4 cup Lime Juice
1/4 cup Lemon Juice
1/2 cup RC Cola
Refrigerate for 24 hours.
Smoking Instructions
80% pecan wood 20% Hickory
You do not want too much Hickory unless you want a strong sour take.
DO NOT place meat under fire. Remember low heat and plenty of smoke.Smoking time for me is 6 am till about 12pm. Place meat in a stainless steel bowl add 3/4 beer and steal tight with foil.KEEP OFF heat but place in smoker to simmer for a few hours more.
Yellow rice and Black beans are in order for this.

Chicken Little
Henny-Penny
One day Henny-penny was picking up corn in the cornyard when-whack!-something hit her upon the head. "Goodness gracious me!" said Henny-penny; "the sky's a-going to fall: I must go and tell the king."
So she went along and she went along and she went along till she met Cocky-Cocky. "Where are you going, Henny-penny?" says Cocky-locky. "Oh I'm going to tell the king the sky's a-falling," says Henny-penny. "May I come with you?" says Cocky-Cocky. "Certainly," says Henny-penny. So Henny-penny and Cocky-Cocky went to tell the king the sky was falling.
They went along, and they went along, and they went along, till they met Ducky-daddies. "Where are you going to, Henny-penny and Cocky-locky?" says Ducky-daddies. "Oh! we're going to tell the king the sky "s a-falling," said Henny-penny and Cocky-Cocky. "May I come with- you?" says Ducky-daddles. "Certainly," said Henny-penny and Cocky. locky. So Henny-penny, Cocky-Cocky, and Ducky. daddles went to tell the king the sky was a-falling.
So they went along, and they went along, and they went along, till they met Goosey-poosey. "Where are you going to, Henny-penny, Cocky-locky, and Ducky-daddles?" said Goosey-poosey. And Henny-penny, Cocky-locky, Ducky-daddles, Goosey-poosey, and Turkey-lurkey said to Foxy-woxy: "We 're going to tell the king the sky's a-falling." "Oh! but this is not the way to the king, Henny-penny, Cocky-locky, Ducky-daddles, Goosey-poosey, and Turkey-lurkey," says Foxy-woxy; "I know the proper way; shall I show it you?" "Oh, certainly, Foxy-woxy," said Henny-penny, Cocky-locky, Ducky-daddles, Goosey-poosey, and Turkey-lurkey. So Henny-penny, Cocky-locky, Ducky-daddles, Goosey-poosey, Turkey-lurkey, and Foxy-woxy all went to tell the king the sky was a-falling. So they went along, and they went along, and they went along, till they came to a narrow and dark hole. Now this was the door of Foxy-woxy's cave. But Foxy-woxy said to Henny-penny, Cocky-locky, Ducky-daddles, Goosey-poosey, and Turkey-lurkey: "This is the short way to the king's palace: you'll soon get there if you follow me. I will go first and you come after, Henny-penny, Cocky-locky, Ducky-daddles, Goosey-poosey, and Turkey-lurkey." "Why of course, certainly, without doubt, why not?" said Henny-penny, Cocky-locky, Ducky-daddles, Goosey-poosey, and Turkey-lurkey.
So Foxy-woxy went into his cave, and he didn't go very far, but turned round to wait for Henny-penny, Cocky-locky, Ducky-daddles, Goosey-poosey, and Turkey-lurkey. So at last at first Turkey-Turkey went through the dark hole into the cave. He hadn't got far when" Hrumph," Foxy-woxy snapped off Turkey-lurkey's head and threw his body over his left shoulder. Then Goosey-poosey went in, and "Hrumph," off went her head and Goosey-poosey was thrown beside Turkey-lurkey. Then Ducky-daddles waddled down, and "Hrumph," snapped Foxy-woxy, and Ducky-daddles' head was off and Ducky-daddles was thrown alongside Turkey-Turkey and Goosey-poosey. Then Cocky-locky strutted down into the cave, and he hadn't gone far when "Snap, Hrumph!" went Foxy-woxy and Cocky-locky was thrown alongside of Turkey-lurkey, Goosey-poosey, and Ducky-daddles.
But Foxy-woxy had made two bites at Cocky-locky, and when the first snap only hurt Cocky-locky, but didn't kill him, he called out to Henny-penny. But she turned tail and off she ran home, so she never told the king the sky was a-falling.

In My Garden
In my secret garden the grass is green and lush
And the leaves of the shrubs shine just like emerald
And every flush-dawn, when the sun wakes with a blush,
Sunshine arrives, with sweet songs that the birds herald.
In my secret garden red and pink roses bloom
And blood red is the colour of camellias.
The lilac blossoms spread their sweet scent of perfume,
While sunflower-like sway colourful dahlias.
A placid brook runs into a calm azure lake,
On its mirror surface white fleecy clouds reflect.
By its shore, on green grass, I like to lie awake,
Watching ripples that wings of dragonflies effect.
In my garden raindrops fall from azure blue sky
And on the blades of grass like pearl drops hang the dew,
Every leaf, every bloom is there to testify
Of a Power that gives birth and lets all renew.
In my secret garden I blossom, come alive,
The grass feels soft, like velvet, underneath my sole;
Inside my secret garden my soul can revive…
…My secret garden is… inside my heart and soul…
When I pass and offer my soul to my Maker
I’ll ask to scatter my ashes to feed the lawn,
Allow only a white swan as a partaker
Gently to glide across the lake at every dawn;
Let my garden remain a home for birds and flowers,
Let white swans gather on the banks of placid stream,
Let mellow bell ring out the passing hours
And let me dream the dreams I was meant to dream.

Kathleen's Famous Coleslaw

Kathleen's Famous Coleslaw
1 (16 ounce) package shredded coleslaw mix
1 c. mayonnaise
1/4 c. sugar
1 1/2 tbsp. white wine vinegar
1 1/2 tbsp. white polish horseradish (Kowalski)
1/4 tsp. celery seed
Mix well and refrigerate till ready to use.
It will not last long so I make a double batch.
