After a busy week of work I was informed to make arrangements for some R & R.

Condo on the beach booked. I love the beach this time of year with no crowds and solitude but as some of you know me I will have paint and canvases packed ... you know my other appendages! :)
Much thanks to the man in my life that looks out after me who also in need of some R& R.

1 Eye of round
2 links of Chorizo Sausage
1 cup Mojo by Goya
1 medium chopped onion
2/3 Dark beer

Directions:
Partially freeze 2 or 3 Chorizo links
Hollow out a core in the center of the eye of round. Score it like a "X" from end to end.
Take Corizo out of the freezer , remove from casing and insert in the center of the eye of round.
Marinate:
Place the stuffed eye of round in a zip lock bag and add the 1 cup of Mojo.
I marinate for 48 hours but 24hours will be fine.

Preheat oven at 350°.Place stuffed eye of round in deep baking pan. UNCOVERED and bake 1 hour.
Take out of oven and add chopped onion and beer.Cover pan with foil tight and bake for 3 more hours between 250° and 275°.
Slow baking is the key to tender roasts.
Slice and serve with Yellow Rice and Black Beans.

One of my family members has informed me that I have not done a blog in awhile.
As I sit here and try to come up with an excuse... the only thing I can think of is BUSY.

1. Art orders out before the 20th (4 more paintings to go)
2. Shopping till I drop and I have just finished the last item today.
3. Decorating every room.
4. The usual chores of my daily life..
5. All sorts of gatherings, parties and getting organized for ours.

6. Stretching out on the couch on a cold night with a good movie and my husband.

Italian Cheese Straws

The Holidays are upon us and many gatherings are on our list in the next few weeks. Italian Cheese Straws are always a hit when serving finger foods.This recipe is a wonderful do ahead as I have done for so many years.Doubling this recipe might not a bad idea for they do not last long.

1 cup all-purpose flour
2 tablespoons grated Parmesan or Romano cheese *Fresh grated is always better
1/2 teaspoon garlic powder
1/4 teaspoon dried basil
1/4 teaspoon dried rosemary
1/4 teaspoon dried oregano
1/2 cup butter
4 ounces sharp Cheddar cheese, shredded
3 tablespoons cold water

1.Mix the flour, Parmesan cheese, garlic powder, basil, rosemary, and oregano in a large bowl. Cut butter into small cubes, and add to flour mixture. Use a pastry blender or 2 knives to cut the butter into the flour; continue until mixture resembles fine crumbs. Stir in cheese. Sprinkle water, 1 tablespoon at a time, over the flour mixture; mix lightly until dough is evenly moist and clings together. You may not use all of the water.
2.Shape dough into a disc, and divide into 12 equal pieces. Wrap in plastic wrap, and refrigerate until firm.
3.Preheat an oven to 425 degrees F 3.On a lightly floured surface, roll pieces of the dough into just slightly thicker than pencil shaped sticks. Cut sticks into 4 to 5 inch lengths. Arrange the pieces on the baking sheet.
4.Bake in preheated oven for 12 to 15 minutes, or until golden brown. Cool on wire racks.

Pumpkin Fluff Dip

1 box of instant vanilla pudding
1 tub of Lite cool whip
1 can of pumpkin

In a mixing bowl combine incredients for your vanilla pudding. Stir until it is nice and smooth. Fold in your whipped cream until everything is nice and blendid. Finally add in your pumpkin. Cover and chill in the refrigerator.
Serve in large bowl with graham crackers for dipping

Spinach & Artichoke Crock Pot Dip.

24 oz. frozen Spinach
2 8 oz. package Cream Cheese
1 cup shredded Parmesan
2 cups Mozzarella
2 14 oz. cans Artichoke Hearts Chopped
1 small Onion diced small
1 Tsp. Garlic Powder
1 Tbs. Horseradish
1 Tsp. Chili Powder

Combine all in crock pot and set to high for 2 hours. Stir from time to time while cooking.
Serve with cracker , chips or just about anything you like.

2-3 pounds chuck roast
1 (10.5 ounce) can beef broth
1 packet dried French onion soup
1 (12 fluid ounce) can or bottle beer
2 Tbs Worcestershire sauce
1 Tbs garlic powder

Add all to Crock pot for 6-8 hours. The longer the more tender.
Sever on rolls with Provolone cheese or any cheese you would like.
I also like to saute a medium onion and mushrooms. Oh So Good!!

1 Chocolate Cake mix
5 eggs
8 oz. Sour Cream
1/2 c. Coconut flakes
1/3 c. bourbon
1/2 c. REAL butter (melted)
1 pkg. Chocolate Instant Pudding
1 c. Pecans Chopped
1/2 c. Semi-sweet Chocolate Chips

Procedure
In Bundt Pan grease well (I use spray)
Bake @ 350 for 45- 55 min.
till tooth pick comes out clean

My grandfather Leone used to bake these all the time and were used to dunk in coffee.
I just thought they were the greatest as a little girl and even better when I started drinking coffee . Missing Grandpa today and his Italian cooking

3 cups all purpose flour
3 eggs
3 tsp. baking soda
1/2 cup sugar
1 tsp. vanilla
1 tsp anise
1/2 cup real butter

Directions
Heat oven at 350

Cream eggs butter and flavoring.

Add rest of ingredients.

blend well and form a dough ball. Pinch off enough to make long tube shape about 5 inches.

Place then on non-stick cookie sheet and bake for about 20 minutes or until lightly tan in color. Remove from sheet and let cool on wire rack.

French Coconut Rum Cake

1 box French Vanilla cake mix
4 eggs
1 cup milk
1/3 cup vegtable oil
1/3 rum
1/3 cup Coco Lopez's Cream of Coconut

Directions
Preheat oven to 350
Mix all ingredience and pour in 9 cup bundt pan.

Cream Cheese frosting
2 (8 ounce) packages cream cheese, softened
1/2 cup butter, softened
2 cups sifted confectioners' sugar
1 teaspoon vanilla extract

Directions
Cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar.

Yesterday was a very fun day spent with my grandson.I asked him what he wanted to do and he said, "Paint." ...So that we did
We started out with Rainbow cupcakes

One box White cake mix follow directions on the box
fill 6 ramekins with batter

Color each ramekin
One Table Spoon of each color in each 12 cupcake well
Bake as directions on box

My grandson turned to me while baking and said..
"I have seen rainbows that cover the whole world"
He inspired a painting in my head which will be on canvas very soon

from scraps found in Papa's garage

I started the nails as my grandson finished it.

For as long as I can remember I have always had a problem with buying retail. It is even hard for me to say the word RETAIL. I can actually say that 90% of the items in my home are Yard Sale, Thrift Stores, Flea Markets and Antique Stores.

This is my latest find.. The person who was selling it was asking $10.00 and my husband gave him $20.00. He could not bring himself to give any less.

The doors open and the inside tray pivots out and you could even cook on the top.What I like about it is on the cool fall nights or a gathering in the winter for a little heat on the patio with friends and family.

One Year Later

A year to this date my husband was rushed to the hospital with chest pains and four days later he has triple bypass surgery.We celebrated last night with many friends and family my Italian roots way ..Pasta

Within one month he was back to work with his trade construction trade.His year check was just great.

He does not get on the computer much and if he does it is for work but on occasion he looks here and tells me in person what he thinks of my daily blog which I love even more. I would reather hear a voice than read a text.You see a year ago if situations turned out different I would have never heard his voice again.
So this part is for you Donny.... I Love You!

Cannoli Tarts

6 ounces cream cheese, softened
1 cup REAL butter, softened
2 cup all-purpose flour
Directions
1.Blend cream cheese and butter or margarine. Stir in flour just until blended. I use a spoon to mix.If a little more flour is needed add 1 or two teaspoons. Roll into a ball and chill in refrigerator for 1 hour.

2.Preheat oven to 350 degrees
3.Shape dough into 48 one-inch balls and press into ungreased Mini Tart pan to make a shallow shell. Bake for 20 minutes, or until LIGHT brown.

Filling
1/2 cup powdered sugar
1 tsp almond extract
1 tsp vanilla extract
1 tsp cinnamon
1/2 cup semi-sweet chocolate chips or grated candy bar as shown in photo
15 oz. ricotta cheese

Mix well and teaspoon filling on each tart.Garnish with Chocolate Chips or candy shavings.Refrigerate till ready to serve.

*NOTE these tarts can be used for any appetiser or dessert.

2 large egg
1 cup cornmeal
1 cup all-purpose flour
1 cup vegetable oil
4 green tomatoes, sliced

1.In a small bowl whisk eggs . In another small bowl mix cornmeal and flour.
2.Heat oil in a large skillet over medium heat; use more or less oil to reach about 1/4 inch in depth.
3.Dredge tomato slices first in egg mixture, then in cornmeal/flour mixture. Carefully place slices in hot oil and cook until browned on both sides.

Oatmeal Delight Cookies

Ingredients
1 cup butter
1 cup light brown sugar
1 cup white sugar
2 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups rolled oats
2 cups white chocolate chips
1 cup chopped pecans
1/2 cup maraschino cherries diced fine

Directions
1.Preheat oven to 350 degrees
Lightly grease cookie sheets.
2.In a medium bowl, cream together the butter, brown sugar and white sugar until smooth. Stir in the egg and vanilla. Sift together the flour, baking powder, baking soda and salt, stir into the creamed mixture. Finally, stir in the rolled oats, white chocolate chips maraschino cherries and pecans. Drop by tablespoons onto the prepared cookie sheets.
3.Bake for 10 to 12 minutes in the preheated oven. Remove from baking sheets to cool on flat surface. I use serving platters.

Italian Tomato Pie

Italian Tomato Pie

1 (9 inch) deep dish pie shell
7 to 8 ripe tomatoes, sliced
1 yellow onion
1 cup ricotta cheese
1/3 cup shredded mozzarella cheese
1/3 cup grated Parmesan cheese
ground black pepper to taste
2 teaspoons fresh basil
2 teaspoons fresh oregano
1/2 teaspoon garlic powder

1.Preheat oven to 350 degrees.
2.Bake the pastry shell for 8 to 10 minutes or until browned.
3.Dice onion and place in the bottom of pastry shell. Slice tomatoes and arrange over onions. Add black pepper to taste.
4.In a medium bowl, combine mozzarella, parmesan or ramano cheese, ricotta cheese, garlic powder and herbs Spread this mixture evenly over tomatoes.
5.Bake at 350 degrees F for 30-40 minutes or until golden brown.

Yesterday was one of the happiest days in my art career.The Cd /Album cover I created for Daniel Lucas of "Boss Caine" along with many other gifts from him arrived.
Over two years now Daniel and I have had a close friendship.It all started where we were on facebook and commented to each other about a couple photos we had in our albums.In the photos we are both standing with the same person.. Justin Townes Earle (son of Steve Earle). From then on we talked quite often and formed an a bond... and out of the friendship has come Aunt Kat and my nephew Daniel.
I am so proud of all his accomplishments over the past few years as he tells me, "Aunt Kat I am so BUSY" and my reply is,"Busy is good and it means you are living and live it to the fullest."

My mothers sister... Aunt Mildred (Millie) is spending a few day in North Carolina with her and my cousin Marty.They called me yesterday as they all sat and looked here on my blog.For some reason I think they are looking today so this is for you Aunt Millie.

Memories of South Bend Indiana as a child and us living so close.Family gatherings.. music, dancing and oh so much laughter.

A funny little story that one of my girlfriends and I were talking about just the other day.We happened to be at an antique store and spotted some plastic fruit.I asked her if she ever picked grapes off and put them in your mouth and let them stick to the end of your tongue.We got to laughing and she said that she had.I then proceeded in telling her it became a habit at your house. (giggles)So if you are ever wondering what ever became of the grapes?
One other little thing .. your laundry shoot that went to the basement.I loved putting things in it. If you are wondering what some items were doing in the clothes I now raise my hand.. it was me!

A year ago my father was selected with some other men to travel to Washington DC for the WWII Memorial
While there children were handing the veterans cards. The one above was from a very sweet 4th grader.My father had to show me the card and I got a little choked up.... How beautiful.

The men in the photo below were the ones that accompanied him on the trip.
