Confederate Rose




The Confederate Rose
Sometimes referred to as the cotton rose, the Confederate rose is a unique Chinese shrub that is found throughout the southeastern United States. The unique popular name for the Confederate rose is based on the fact that the general area where this beautiful shrub is grown roughly corresponds to the section of the USA that once seceded from the Union and was known as the Confederate States of America.
The Confederate rose, properly identified as hibiscus mutabilis, is different in appearance from more conventional types of roses. Grown on plants that are shrublike and can grow to a height of twelve to fifteen feet, the Confederate rose has the unique property of changing color during the course of the day. The bloom on the rose opens in the morning as a beautiful white or a subtle pink, and gradually darkens during the course of the day. By evening, the petals of the Confederate rose typically achieve a deep red appearance.

Eskimo Pie Doll



Many years ago when I was just a child I saved box tops to send off for The Eskimo Pie Doll. I waited for what seemed to be forever and it never arrived. Through the years I have often wondered what happened to it. A year ago while stopping at a yard sale I saw this one on the table. This is the first one I have ever seen and held. I told the woman that was having the sale my story.She told me that her mother sent off for this doll for her we both got a laugh out of it and she just gave it to me. I will treasure this little Eskimo forever. He has a few blemishes over the 40 plus years.

My daughter came over not long ago and treated us to her Tilapia. I have begged for the recipe but she will not share. So we will just enjoy!

Shrimp Diablo

Shrimp Diablo
3 12 oz. cans of Tomato Puree
1 can Tomato Paste
1 Bell Pepper chopped small
1 Onion chopped small
2 TB. Olive Oil
1 TB. Basil
1 TB. Oregano
1 TB. Italian Seasonings
1/4 tsp. Fennel
3 Bay Leaves
3 tsp. Ground Cayenne according to your taste more or less
2 lbs. Shrimp pealed and deveined
any type of pasta
Romano or Parmesan Cheese
In Crock Pot put the three cans of Tomato Puree and Tomato Past.In a medium skillet add Olive Oil and saute chopped onion and bell pepper till onion is transparent then add to Crock Pot.Add all ingredients minus Shrimp.Set Crock Pot at Medium for 6 to 8 hours.The last hour of cooking add shrimp due to the fact that if they are cooked all day they will taste like an pencil eraser.
Boil Pasta ,drain then put in a huge serving bowl grate some cheese on top and add a small amount of your sauce (Italians call it gravy) mix and add a bit more. Bowl up remaining gravy to be added. Top with more cheese.If Hot is your desire .. add crushed red pepper flakes
As noted before in another recipe... I do not use imitation cheese unless you like cardboard on your food.It does not have the flavor as REAL Romano or Parmesan Cheese.So get your grater out and grate!

Kat's Salsa


Kat's Salsa
3 cans diced Tomatoes
1 can Green Chili's
1 large onion chopped
3 Tbs. Cilantro Fresh or dried (according to taste)
2 Tbs. Garlic powder
1 Tb. Cumin (adds a smoky flavor)
Recipe can be adjusted according to amount wanting to make.
Good with Tortilla Chips or in any Mexican casserole.
