Rest and Relaxation

After a busy week of work I was informed to make arrangements for some R & R.
Condo on the beach booked. I love the beach this time of year with no crowds and solitude but as some of you know me I will have paint and canvases packed ... you know my other appendages! :)

Table Art

Boliche
1 Eye of round
2 links of Chorizo Sausage
1 cup Mojo by Goya
1 medium chopped onion
2/3 Dark beer
Directions:
Partially freeze 2 or 3 Chorizo links
Hollow out a core in the center of the eye of round. Score it like a "X" from end to end.
Take Corizo out of the freezer , remove from casing and insert in the center of the eye of round.
Marinate:
Place the stuffed eye of round in a zip lock bag and add the 1 cup of Mojo.
I marinate for 48 hours but 24hours will be fine.
Preheat oven at 350°.Place stuffed eye of round in deep baking pan. UNCOVERED and bake 1 hour.
Take out of oven and add chopped onion and beer.Cover pan with foil tight and bake for 3 more hours between 250° and 275°.
Slow baking is the key to tender roasts.
Slice and serve with Yellow Rice and Black Beans.
