Grape Salad


Grape Salad

4 lb red grapes

8 oz cream cheese

1/2 C sugar

1/2 C. brown sugar

1 tsp vanilla

8 oz sour cream

1 C. pecans

Take stems off grapes and wash and dry them. Set aside.
Mix cream cheese, sugar, vanilla , brown sugar, chopped pecans and sour cream.
Fold in grapes.

Refrigerate till ready to use
* My Grandmother McQueen would replace the grapes with
diced apples in this recipe.

Boss Caine

Boss Caine are a folk/americana collective from York, England.

Formed around the songs and music of singer-songwriter Daniel Lucas (aka GT Turbo) they released their debut album on Little Num Num Music in March 2010.

The album, entitled 'The Ship That Sailed' contains a selection of tunes written by Lucas over the last few years. A time that saw him leave his home town for London, before returning to York and putting together the revolving line-up of local musicians that would become Boss Caine.

Recorded at Sam Forrest's 'Factory of Un-Professional Sound' studio in the North Yorkshire countryside, the album see's Boss Caine's core team of Lucas, Forrest and Andy Gaines producing the record and being joined by many of the musicians who have graced the stage as Boss Caine over the last few years.

Years of hard living, hard drinking and love turned sour inform an album that is for the large part acoustic and at times visits some quite dark places, but is ultimately carried along by a positivity and stoicism. The record is also the first in a trilogy of albums containing material written by Dan over the last few years that are due for release later this year.

Lucidity

Crockpot Roast


3-4 lb. bottom round or chuck pot roast
1 lg onions diced
3 med carrots diced
3 stalks celery diced
8 red potatoes peeled and quartered
1/2 a bell pepper diced
2 tbs. Olive Oil
1 cup Red Wine
3 bullion cubes
1 can Cream Mushroom Soup
salt and pepper to taste


Sear roast both sides in skillet with 2 TBS. Olive Oil.
Crock pot set on high place all vegetables,wine and cream of mushroom soup on bottom.
Put seared roast on top and cover.Crock pot set high for 5-6 hours
If thickening is needed 1 hour before serving add 2 TB. flour to cup of water mix then pour into crock pot.

Tzatziki

Tzatziki
2 cucumbers peeled, sliced down middle for seeds to be removed then diced
1 32 oz. plain yogurt put in dish towel and squeezed for moisture to be removed
2 garlic cloves chopped fine.
2 chives chopped fine
1 8 oz. cream cheese
1 tsp. dill
1/2 cup feta cheese
Combine all and refrigerate
Serve with crackers,on a salad or even in a pita.

Pasta e Fagiole




Pasta e Fagiole
Pasta Fazool

1 pound dried Cannelloni beans
Water
2 c. (about 1/2 lb.) smoked ham or Prosciutto

2 tablespoons flour
Olive oil
2 cloves garlic, crushed
1 large onion
3 large stalks celery, with leaves
3 medium carrots
1/2 cup butter
2 can (28 oz.) crushed tomatoes
1/2 cup chopped parsley, firmly packed
2 cans (10 1/2 oz. each) condensed beef broth
Salt
1/4 teaspoon ground black pepper
1 tablespoon fresh basil
1 Bay leaf
8 oz. smallest macaroni shells (elbow or other sm. macaroni may be used)

Soak beans overnight in cold water; rinse and drain. Place beans in a large pot, add flour plus 3 tablespoons of olive oil and shake until beans are coated. Add 2 quarts warm water and the garlic; cover and simmer for 1 1/4 hours.

Meanwhile, coarsely chop onion, celery and carrots. Saute vegetables in 2 tablespoons olive oil and butter in large skillet for 5 minutes then add meat for 5 more. Add tomatoes and parsley; cover and simmer for between 30 to 45 minutes. When beans are done, add sauteed vegetables, beef broth, 1 teaspoon salt, black pepper and basil. Simmer for 15 minutes. Add water if necessary, to achieve desired consistency.

Boil 8 oz. macaroni drain and serve with Pasta e Fagiole
Serve with crusty Italian bread
